Quick Rice Pudding

[COOK TIME: 30 MIN]


Ingredients
2 cups cooked white rice
3 cups milk
1/2 cup sugar
1 small pinch salt
1 tsp vanilla extract
1/2 tsp cinnamon (optional)
1 small pinch nutmeg (optional)

Directions
Combine cooked rice, milk, sugar and salt in a medium saucepan.
Bring to a boil, then lower the heat to a simmer and stir in the vanilla and raisins.
Cook until just about all of the milk is absorbed (30-45 minutes, depending on how absorbent your rice is).
Stir in cinnamon and/or nutmeg, if using.
Divide rice pudding into individual serving dishes serve warm or chilled.

Cinnamon Rolls

[COOK TIME: 15 MIN]
Ingredients
1 cup warm milk (110 degrees F/45 degrees C)
1/2 cup white sugar
2 1/2 teaspoons dry active yeast
1/3 cup butter, melted
1 teaspoon salt
4 1/2 cups bread flour
2 eggs

1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

Directions
Place warm milk in the pan of a bread machine. Add sugar and stir til dissolved.
Sprinkle yeast evenly over the top of the milk and sugar mixture, close bread machine and let sit for 10 minutes. Add melted butter, salt, bread flour, and eggs.
Turn machine to "Dough" and hit the start button.
After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into rolls about 1 inch in thickness. Place rolls in a lightly greased baking pan.
Preheat oven to 400 degrees F (200 degrees C).
Bake rolls in preheated oven until golden brown, about 15 minutes.

I make a quick frosting with softened butter, confectioner's sugar, vanilla extract, and milk.
Wait until the rolls have cooled down some before
spreading any icing or it will just melt all over the place.
The first time making these I cup them about half an inch
in thickness hoping to get more out of the roll.
However, this causes them to be tough and hard to eat.
After they have cooled, if you still want that fresh out of oven feeling just pop one in the microwave for 15 seconds...does just the trick.

Brownies

[COOK TIME: 30 MIN]
Ingredients
2 cups white sugar
1 cup butter
1/2 cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chips

Directions
Melt the butter and mix all ingredients in the order given.
Bake at 350 degrees F for 20 to 30 minutes in a 9 x 13 inch greased pan.
Cool in the pan and dust lightly with powdered sugar.

Perfect to calm any cravings for something sweet, but not to sweet.

Mini Apple Turnovers

[COOK TIME: Varies]
Ingredients
2 tbsp. all-purpose flour
3/4 c. sugar4 sm. apples, peeled & thinly sliced
2 tsp. cinnamon
1/4 tsp. nutmeg
2 c. flour
1 tsp. salt
1/2 c. milk
1/2 c. salad oil
Hot salad oil

Directions
Cook apples in saucepan, over low heat about 20 minutes, or until tender. Combine sugar, 2 tablespoons flour, cinnamon and nutmeg; stir into apples and cook over low heat until thickened. Stir often. Set aside.
Combine 2 cups flour, salt, milk and 1/2 cup oil in a mixing bowl; stir until mixture forms a ball. Divide mixture in half and roll each half out on a lightly floured board. (1/8th inch thickness). Cut with a 2 1/2 inch biscuit cutter. Spoon about 3/4 teaspoon apple mixture on half of each pastry circle. Moisten edges with water, fold in half, press with a fork to seal. Fry turnovers in one inch of hot oil until lightly browned. Turn once. Drain on paper towels.

Custard

[COOK TIME: 45 MIN]
Ingredients
3 cups milk
4 eggs
1/2 cups sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
Optional:
Pinch of nutmeg and/or cinnamon


Directions
In a bowl add all four eggs, beat throughly. Mix in sugar, continue to stir til most of the sugar is dissolved.
Pour milk into a pot heat at just under a simmer, do NOT allow the milk to bubble. When a light film is present remove from the heat.
Slowly add a small amount of the warm milk to the egg and sugar mixture so to not cook the eggs, stir. Continue this process until everything is well blended.
Add vanilla and salt.
Gently pour mixture into a baking dish.Preheat the oven to 350°F (175°C).
Place the baking dish into a larger baking dish.
Set both dishes carefully on the oven rack, fill the larger baking dish halfway with water.
Sprinkle nugmeg and/or cinnamon over the top if desired.
Bake for 45 minutes or until a toothpick can be inserted in the center comes out clean.

This is a fantastic custard.
Its great fresh from the oven, but even better after sitting in the fridge overnight.
