Peach Muffins

[COOK TIME: 25 MIN]

Ingredients
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups vegetable oil
3 eggs, lightly beaten
2 cups white sugar
1/4 teaspoon vanilla extract
2 cups peeled, pitted, and chopped peaches

Directions
Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
In a large bowl, mix the flour, cinnamon, baking soda, and salt.
In a separate bowl, mix the oil, eggs, vanilla, and sugar.
Stir the oil mixture into the flour mixture just until moist.
Fold in the peaches. Spoon into the prepared muffin cups.
Bake 25 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely.

Roasted Red Pepper Muffins

[COOK TIME: 25 MIN]

Ingredients
1 teaspoon cornmeal
1 3/4 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon coarsely ground pepper, divided
1/4 teaspoon salt
1 egg
3/4 cup buttermilk
1/4 cup vegetable oil
2/3 cup chopped roasted red pepper [about 1 pepper]
1/2 cup shredded mozzarella cheese

Directions
For Roasted Peppers:
Preheat oven on low broil setting
Cut red peppers in half
Place on a greased baking sheet cut side down
Brush olive oil on skin to coat thoroughly
Broil in preheated oven and watch for charring of the skin, about 10-15 min
Remove sheet from the oven, with tongs, put peppers in a bowl
Set the bowl in a brown paper bag
Fold over the top of the bag to seal, allow peppers to rest for about 10 min
Remove skins and seeds from peppers and slice

For Muffins:
Grease muffin cups and sprinkle with the cornmeal; set aside.
In a large bowl, combine flour, sugar, baking powder, 1/4 teaspoon pepper and salt. In another bowl, beat the egg, buttermilk and oil.
Stir into dry ingredients just until moistened.
Fold in red pepper and cheese.
Fill prepared muffin cups two-thirds full.
Sprinkle with remaining pepper.
Bake at 400 degrees F for 20-25 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm. Refrigerate leftovers

Pumpkin Chocolate Chip Muffins

[COOK TIME: 25 MIN]

Ingredients
3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips

Directions
Preheat the oven to 400 degrees F (200 degrees C).
Grease and flour muffin pan or use paper liners.
Mix sugar, oil, eggs. Add pumpkin and water.
In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt.
Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter.
Bake in preheated oven for 20 to 25 minutes

Strawberry Banana Muffins

[COOK TIME: 25 MIN]

Ingredients
2 1/4 cup of flour
1/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1 1/2 cup fresh strawberries, diced
3/4 cup brown sugar
2 eggs, lightly beaten
1 stick of butter, melted
2 large ripe bananas, mashed
1 tsp vanilla

Directions
Preheat oven to 350 degrees.
Coat a muffin pan with cooking spray.
In a large bowl combine all dry ingredients.
After mixing, gently fold in the strawberries, making sure to coat them with flour - this helps prevent the berries from sinking while baking.
In another large bowl, combine the brown sugar, eggs, melted butter, bananas, and vanilla until mixed thoroughly.
Slowly combine the wet mixture into the dry mixture, stir until just combined - do not over mix the batter or you will have tough muffins.
Fill the muffin tray with the batter, place in the oven and bake for 22-25 minutes or until a knife inserted in the center of a muffin comes out clean.
Transfer to a wire rack to cool. Enjoy!

Fresh Orange Muffins

[COOK TIME: 20 MIN]
Ingredients
1 orange, quartered and seeds removed (with peel)
1/2 cup orange juice
1 large egg
1/2 cup butter
1 3/4 cups all-purpose flour
3/4 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
Glaze:
1 1/4 cups powdered sugar
1 tablespoon milk
1 tablespoon orange or lemon juice
1 drop red & yellow food coloring (optional)

Directions
Preheat oven to 400F
Spray a muffin tin (12) with non-stick cooking spray and set aside.
Put orange quarters in food processor (or blender) along with orange juice and process or blend until pureed.
Add egg and butter to food processor and combine; pour into large bowl.
Combine dry ingredients together in a separate bowl, then add all at once to orange mixture.
Stir to combine.
Fill muffin cups about 3/4 full.
Bake in preheated oven for 20 minutes; remove from oven and let stand in tin for 5 minutes before removing muffins.
Combine glaze ingredients, stirring until sugar dissolves.
Drizzle over cooled muffins

WHOLE orange

Apple Cinnamon Muffins

[COOK TIME: 45 MIN]
Ingredients
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/3 cup vegetable oil
1 egg
1/3 cup milk
2 apples - peeled, cored and chopped

1/2 cup white sugar
1/3 cup all-purpose flour
1/2 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Directions
Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean

These muffins are a little on the different side with the big chunks of apple,
but they are perfect for breakfast or a quick snack.

Chocolate Chocolate Chip Muffins

[COOK TIME: 30 MIN]
Ingredients
1 3/4 cup all-purpose flour
1 cup chocolate chips
3/4 cup granulated sugar
1/3 cup cocoa, sifted if lumpy
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/3 cup cooking oil
1 teaspoon vanilla

Directions
Combine all-purpose flour, chocolate chips, sugar, cocoa, salt and baking powder in a mixing bowl. Create a well in the center.
Beat egg in a small bowl. Add milk, cooking oil, and vanilla. Stir and pour into well. Stir until just moistened.
Grease 12 muffin cups with cooking spray. Fill cups 3/4 full.
Bake at 400°F (205°C) for 20 minutes until golden.
