Lavender Bread

[COOK TIME: 50 MIN]

Ingredients
3/4 cup milk
3 tablespoons finely chopped fresh lavender
6 tablespoons butter, softened
1 cup white sugar
2 eggs
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Directions
Preheat the oven to 325 degrees F (165 degrees C).
Grease and flour a 9x5 inch loaf pan.
Combine the milk and lavender in a small saucepan over medium heat.
Heat to a simmer, then remove from heat, and allow to cool slightly.
In a medium bowl, cream together the butter and sugar until smooth.
Beat in the egg until the mixture is light and fluffy.
Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk and lavender until just blended.
Pour into the prepared pan.
Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the crown of the loaf comes out clean.
Cool in the pan on a wire rack.

Zucchini Bread

[COOK TIME: 60 MIN]

Ingredients
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini

DirectionsGrease and flour one 9 x 5 inch pan.
Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl.
Add sifted ingredients to the creamed mixture, and beat well.
Stir in zucchini and nuts until well combined.
Pour batter into prepared pan.
Bake for 60 - 80 minutes, or until tester inserted in the center comes out clean.
Cool in pan on rack for 20 minutes.
Remove bread from pan, and completely cool.

Zucchini Banana Bread

[COOK TIME: 50 MIN]

Ingredients
3 eggs
3/4 cup vegetable oil
2/3 cup packed brown sugar
1 cup white sugar
1 cup grated zucchini
3 bananas, mashed
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Directions
Preheat oven to 325 degrees F (165 degrees C).
Grease and flour one 5x9 inch bread loaf pans.
In a large bowl, beat eggs until light yellow and frothy.
Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt.
Divide the batter evenly between the prepared loaf pan.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes.
Allow to cool in the loaf pans on a wire rack before removing and serving.

Mashed Potato Bread

[COOK TIME: 45 MIN]
Ingredients
1/4 cup warm water
3 teaspoons yeast
1-1/2 cups milk
3 tablespoons butter
1 cup mashed potatoes at room temperature
4 tablespoons sugar
2 teaspoons salt
6 cups flour
1 egg, for glaze

Directions
Pour warm water into the electric mixer bowl.
The temperature of the water should be about 86-118 degrees F.
You can test it with your hand, it should feel very warm but not comfortable.
Sprinkle the yeast over the water.
Leave it for 8 minutes or so.
With the electric mixer fitted with the dough hook attachment, at speed 2, gradually mix in the mashed potatoes, butter, milk, sugar and salt.
Slowly mix in the flour.
The dough should turn into a ball.
Continue to knead on speed 2 for 3 minutes or until dough is elastic and smooth.
The dough will not form into a ball if it is too dry; add a tablespoon of cold water one at a time until it does.
On the other hand, if your mixture is more like a batter (sticky and gooey), add one tablespoon flour one at a time while slowly mixing.
Transfer dough to greased bowl.
Cover with a clean towel/cloth or food wrap and let rise until doubled, this should take about 90 minutes.
Oil 2 bread pans and preheat oven to 350 degrees F.
Divide dough into two pieces.
Shape each piece into bread shape and place in the greased pans.
Cover pans with clean towel or plastic wrap and let rise again until doubled in size, 50-60 minutes.
Use a brush and apply beaten egg over the tops of the bread doughs, then bake both pans at once for 45-50 minutes or until golden brown.

Irish Soda Bread

[COOK TIME: 50 MIN]

Ingredients
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine, softened
1 cup buttermilk
1 egg
1/4 cup butter, melted
1/4 cup buttermilk

Directions
Preheat oven to 375 degrees F (190 degrees C).
Lightly grease a large baking sheet.
In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine.
Stir in 1 cup of buttermilk and egg.
Turn dough out onto a lightly floured surface and knead slightly.
Form dough into a round and place on prepared baking sheet.
In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture.
Use a sharp knife to cut an 'X' into the top of the loaf.
Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, about 30 to 50 minutes.
You may continue to brush the loaf with the butter mixture while it bakes.

Challah

[COOK TIME: 25 MIN]
Ingredients
1 cup warm water
1/2 cup white sugar
1 tablespoon honey
1/2 cup vegetable oil
2 1/2 teaspoons salt
2 eggs, room temperature
4 cups bread flour
2 1/4 teaspoons dry active yeast
1 egg, beaten
1 tablespoon

Directions
Place warm water, sugar, and yeast in the pan of the bread machine let sit for 10 minutes.
Add honey, vegetable oil, salt, flour, and 2 eggs.
Select Dough cycle; press Start.
After the machine is done, take the dough out, and place it on a very lightly floured board, punch the dough down, and let rest for 5 minutes.
Divide the dough in half.
Then divide into 3 equal pieces, roll into ropes about 12 to 14 inches, and braid into a loaf.
Do the same with the remaining other half.
Gently put the loaves on a greased cookie sheet, mist with water, cover loosely with plastic wrap, and let rise for 1 to 1 1/2 hours in a warm, draft free place, until double in size.
Preheat oven to 350 degrees F (175 degrees C). In a small bowl, beat together 1 egg and 1 tablespoon water.
Brush risen loaves with egg mixture.
Bake in preheated oven for about 20 to 25 minutes.
If it begins to brown too soon, cover with foil.

Pumpkin Gingerbread

[COOK TIME: 1 HOUR]
Ingredients
3 cups sugar
1 cup vegetable oil
4 eggs
2/3 cup water
1 (15 ounce) can pumpkin puree
2 teaspoons ground ginger
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder

Directions
Preheat oven to 320 degrees F.
Lightly grease two 9x5 inch loaf pans.
In a large mixing, combine sugar, oil and eggs; beat until smooth.
Add water and beat until well blended.
Stir in pumpkin, ginger, allspice and cinnamon.
In medium bowl, combine flour, soda, salt, and baking powder.
Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed.
Divide batter between prepared pans.
Bake in preheated oven until toothpick comes out clean, about 1 hour.

Banana Bread

[COOK TIME: 1 HOUR]
Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
Pinch of salt
Pinch of cinnamon
1 1/2 cups of all-purpose flour


Directions
No need for a mixer for this recipe...
Preheat the oven to 325°F (162°C).
With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda, baking powder, salt, and cinnamon over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour or until a toothpick inserted into the middle of the bread comes out clean. Cool on a rack. Remove from pan and slice to serve.
