Baked Fish & Chips

[COOK TIME: 30 MIN]
Ingredients
For Chips:
4 russet potatoes, peeled and cut into wedges
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder

For Fish:
1 pound sole or cod fillets
1 cup of flour
3 eggs, beaten
1 cup italian bread crumbs
salt and pepper to taste

For Tartar Sauce:
1 cup mayonaise
2 small sweet pickles chopped finely
¼ cup finely chopped onion
2 tablespoons lemon juice
salt and pepper to taste

Directions
For Chips:
Coat potato wedges throughly with olive oil and sprinkle with seasoning
Arrange the potatoes in an even layer on greased baking sheets
Bake in the oven for 15 minutes while breading the fish

For Fish:
In three shallow bowls, set up the breading stations:
one with the flour seasoned with salt and pepper,
one with the beaten eggs, and
one with the italian bread crumbs.
Dip each piece of the fish in the flour, shaking off any excess.
Transfer to the egg, coating evenly, and finally cover with the bread crumbs.
Place the fish in an even layer a greased baking sheet
Carefully flip the potatoes and return to the oven.
Place the fish in the oven.
Bake the fish for 6-8 minutes on each side until the breading is golden and the fish is cooked through.
The fish and the fries will be done at the same time.

For Sauce:
Combine all ingredient and stir.

Biscuits and Gravy

[COOK TIME: 15 MIN]

Ingredients
For Biscuits:
2 1/2 cups (325 grams) all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 tablespoon (14 grams) granulated white sugar (optional)
1/2 cup (113 grams) cold unsalted butter, cut into small pieces
3/4 cup (180 ml) milk
1 large egg, lightly beaten
Topping:
1 large egg, lightly beaten with 1 tablespoon milk

For Gravy:
1/2 lb sausage
1/4 cup butter
1/3 cup all-purpose flour
3 1/4 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper

Directions
For Biscuits:
Preheat oven to 400 degrees F (205 degrees C) and place rack in center of oven.
Line a baking sheet with parchment paper.
In a large mixing bowl, sift or whisk
together the flour, baking powder, salt and sugar.
Cut the butter into the dry ingredients until the mixture resembles coarse crumbs (use pastry blender, two knives, or fingertips).
Add the milk and slightly beaten egg and stir until just combined. (The texture should be sticky, moist and lumpy.)
Place mixture on a lightly floured surface and knead the dough gently until it comes together and is a smooth dough.
Roll out dough to 1/2 inch thickness.
Cut out biscuits with a lightly floured round cookie cutter.
Place on prepared baking sheet and brush the tops with the beaten egg and milk mixture and bake for about 10 - 15 minutes or until the tops are golden brown and a toothpick inserted in the center of the biscuit comes out clean.
Remove from oven and place on a wire rack

For Gravy:
Brown sausage in skillet, stirring until it crumbles.
Drain, reserving 1 Tbs. of drippings in the skillet.
Remove and set sausage aside.
Add butter to drippings, heat over low heat.
Add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add milk, cook over medium heat stirring constantly.
Stir in seasonings and sausage.
Cook until heated.

great for breakfast or dinner =]

Chicken Pot Pie

[COOK TIME: 35 MIN]
Ingredients1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk

Crust:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter
3 tablespoons boiling water

Directions
To begin making pastry dough, sift 1 1/2 cups flour, baking powder, and 1/2 teaspoon salt.
Cut in 1/2 cup butter.
Mix with your fingerstips until the mixutre resembles bread crumbs that holds together when pinched.

Add boiling water to the flour mixture.
Stir until mixture clings in a ball.
Divide dough in half, and roll out two crusts.

Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine chicken, carrots, peas, and celery.
Add water to cover and boil for 15 minutes.
Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent.
Stir in flour, salt, pepper, and celery seed.
Slowly stir in chicken broth and milk.
Simmer over medium-low heat until thick.
Remove from heat and set aside.
Place the chicken mixture in bottom pie crust.
Pour hot liquid mixture over.
Cover with top crust, seal edges, and cut away excess dough.
Make several small slits in the top to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

The only thing I would change about this recipe
is to add a cubed potatoe.
Other than that this is just perfect.

Beef Back Ribs

[COOK TIME: 2 & 1/2 Hours]
Ingredients
Beef Back Ribs
Your favorite seasoning
Honey
Your favorite BBQ sauce

Directions
Preheat oven to 325.
Place ribs on a cookie sheet wrapped in foil. [ease clean up]
Season one side of the ribs. Cook for 30 minutes.
Turn rack(s)
Season other side of the ribs. Cook for 30 minutes.
Turn rack(s)
Brush on honey. Cook for 30 minutes.
Turn rack(s)
Brush on honey. Cook for 30 minutes.
Turn rack(s)
Brush on BBQ sauce. Cook for 30 minutes.
Turn rack(s)
Brush on BBQ sauce. Cook for 30 minutes.
Pull from oven, cut, serve.

This came out great and was so easy to do...
I used 2 tongs to turn the racks
I'm sure this would work for pork ribs as well.
Served with corn on the cob and slaw...
YUM! ^_^

Three Cheese Ravioli

[COOK TIME: Varies]
Ingredients
Dough:
2 1/2 cups all-purpose flour, plus more for dusting
1 cup very hot water
Filling:
3/4 cup whole milk ricotta
3/4 cup finely grated mozzarella cheese
1/4 cup grated Parmesan
2 tablespoons pesto sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 beaten egg

Directions

For the dough:
In a large bowl combine the flour and the water. Using a wooden spoon, stir to combine into a large ball. Cover with plastic wrap and let sit for 10 minutes.
For the filling:
Combine all the ingredients in a medium bowl and stir to combine.
To form the ravioli, cut the dough into 4 evenly sized pieces. The dough should be slightly sticky. Add extra flour as necessary for rolling, but use only a little as necessary. Recover the dough with the plastic wrap.
Lightly dust the work surface and a rolling pin. Working with 1 piece of dough at a time, roll out thin and cut with a 2 1/2 inch biscuit cutter. Spoon about 3/4 teaspoon cheese mixture on half of each circle. Moisten edges with water, fold in half, press with a fork to seal. Place the finished ravioli on a baking tray and continue forming the remaining ravioli.
Bring a large pot of salted water to a boil over high heat. Add half the ravioli and cook until the ravioli float stirring occasionally, about 3 to 4 minutes. Drain into a large bowl and cook the remaining ravioli.

Serve with your favorite pasta or pesto sauce or both =]
Never thought making ravioli could be so simple.
They are also good if you add
1/2 of a seasoned/cooked chicken breast, chopped, into the filling

Italian Chicken Strips with Baked Pasta


[COOK TIME: 20 MIN]
Ingredients
1 cup seasoned bread crumbs
1/2 cup grated Parmesan
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon garlic powder
8 boneless chicken breast halves, cut into 1/2-inch strips
1/2 cup (1 stick) melted butter
Marinara sauce


Directions
Preheat the oven to 400 degrees F.
In a pie plate or platter, combine the bread crumbs, Parmesan, thyme, basil, oregano, salt, garlic powder, and red pepper. Dip the chicken strips in the melted butter, then dredge them in the bread crumb mixture. Place the chicken strips in a single layer on a lightly greased baking sheet. Bake for 20 minutes, or until chicken is cooked through. Serve the chicken sticks hot with marinara sauce



SIDE DISH: BAKED PASTA

[COOK TIME: 20 MIN]
Ingredients
1 lb bag penne rigate pasta
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
Marinara sauce


Directions
Cook penne pasta and drain.
In a 5x8 inch loaf pan place a small bit of sauce in the bottom, add half the noodles, sauce, half parmesan cheese, and half the mozzarella cheese in layers. Repeat.
Bake at the same time as the chicken strips. Enjoy.

Serve with french or hot garlic bread.
