[COOK TIME: 30 MIN]Ingredients
For Chips:
4 russet potatoes, peeled and cut into wedges
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
For Fish:
1 pound sole or cod fillets
1 cup of flour
3 eggs, beaten
1 cup italian bread crumbs
salt and pepper to taste
For Tartar Sauce:
1 cup mayonaise
2 small sweet pickles chopped finely
¼ cup finely chopped onion
2 tablespoons lemon juice
salt and pepper to taste
Directions
For Chips:
Coat potato wedges throughly with olive oil and sprinkle with seasoning
Arrange the potatoes in an even layer on greased baking sheets
Bake in the oven for 15 minutes while breading the fish
For Fish:
In three shallow bowls, set up the breading stations:
one with the flour seasoned with salt and pepper,
one with the beaten eggs, and
one with the italian bread crumbs.
Dip each piece of the fish in the flour, shaking off any excess.
Transfer to the egg, coating evenly, and finally cover with the bread crumbs.
Place the fish in an even layer a greased baking sheet
Carefully flip the potatoes and return to the oven.
Place the fish in the oven.
Bake the fish for 6-8 minutes on each side until the breading is golden and the fish is cooked through.
The fish and the fries will be done at the same time.
For Sauce:
Combine all ingredient and stir.
