Zucchini Quiche

[COOK TIME: 45 MIN]

Ingredients
1 (9 inch) unbaked pie crust
2 tablespoons butter
1 pound zucchini, thinly sliced
1/4 cup chopped onions
1 1/2 cups shredded mozzarella cheese
1 cup cottage cheese
3/4 cup heavy cream
1/4 milk
3 eggs, lightly beaten
3/4 teaspoon salt
1/2 teaspoon chopped fresh oregano
1/2 teaspoon chopped fresh basil
1/4 teaspoon garlic powder
Dash pepper

Directions
Prick bottom of pastry with a fork.
Bake at 425 degrees F for 7 minutes.
Reduce heat to 350 degrees F.
In a small skillet, saute zucchini and onion in butter until tender; drain.
Place half the zucchini in the crust. Sprinkle with mozzarella cheese.
In a bowl, combine cottage cheese, cream, milk, eggs, salt, oregano, basil, garlic powder and pepper.
Pour into crust.
Arrange remaining zucchini slices over top.
Bake for 45 minutes or until a knife inserted in the center comes out clean.

Cheddar Cauliflower Quiche

[COOK TIME: 30 MIN]

Ingredients
1 unbaked pie crust
4 cups cooked chopped cauliflower
2 eggs
1/2 cup milk
1/2 cup mayonnaise
1 1/2 cups shredded Cheddar cheese, divided
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper

Directions
Preheat oven to 400 degrees F (205 degrees C).
Line pastry with aluminum foil and a layer of pie weights or dried beans.
Bake in the preheated oven until edge of crust is golden, about 10 minutes. Carefully remove the foil and weights; bake about 5 minutes more.
Spoon cauliflower into crust
In a blender, combine eggs, milk, mayonnaise, 1-1/4 cups cheese, nutmeg and pepper; cover and process until smooth.
Pour mixture into pie crust.
Sprinkle with remaining cheese.
Bake, uncovered, at 350 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean.
Let stand for 10 minutes before cutting.

One of my favorite side dishes as a kid was cauliflower covered in melted cheese sauce, this is a fabulous equivalent! Partnered with a soup this quiche makes a wonderful dinner
