[COOK TIME: 45 MIN]3 cups milk
4 eggs
1/2 cups sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
Optional:
Pinch of nutmeg and/or cinnamon
Directions
In a bowl add all four eggs, beat throughly. Mix in sugar, continue to stir til most of the sugar is dissolved.
Pour milk into a pot heat at just under a simmer, do NOT allow the milk to bubble. When a light film is present remove from the heat.
Slowly add a small amount of the warm milk to the egg and sugar mixture so to not cook the eggs, stir. Continue this process until everything is well blended.
Add vanilla and salt.
Gently pour mixture into a baking dish.
Preheat the oven to 350°F (175°C).Place the baking dish into a larger baking dish.
Set both dishes carefully on the oven rack, fill the larger baking dish halfway with water.Sprinkle nugmeg and/or cinnamon over the top if desired.
Bake for 45 minutes or until a toothpick can be inserted in the center comes out clean.

This is a fantastic custard.
Its great fresh from the oven, but even better after sitting in the fridge overnight.
