Ingredients3 tablespoons chopped onion
4 tablespoon butter
3 cups milk
2 cups mashed potatoes
1 teaspoon salt
1/2 teaspoon pepper
1 cup chopped celery
2 cups peeled, chopped carrots
1 cup peeled, chopped red potatoes
1 tablespoon minced fresh chives
Directions
In a saucepan, saute the onion in butter until tender.
Add milk, mashed potatoes, salt, celery, carrots, potatoes, and pepper.
Simmer until veggies are tender and soup is thick and creamy
Garnish with chives.
